Breakfast Hash Cakes
These tasty little breakfast muffins are a nice quick meal on the run option. Throw it in the microwave for a minute and you are on your way with a healthy hearty breakfast.
• Potatoes or Frozen Hash Browns • 4Eggs
• 1CupMilk
• Pinch of Salt
• Pinch of Pepper
• 1 Cup Favorite Cheese, Grated
• 1/4 Cup Green Onions, Chopped
• 3/4 Cup Crumbled Bacon or Ham

Preheat oven to 350 degrees.
Blend eggs, milk, salt and pepper together. Cover bottoms of muffin tins with hash browns to about 1/4 full.
Divide grated cheese, onions and bacon or ham into each muffin cup of tin.
Divide egg mixture evenly into each muffin cup. Bake at 350 degrees until golden brown.
