Luck O' The Irish Cake Pops
St. Patrick’s Day is the one day a year where everyone is a little bit Irish. With St. Patrick’s Day celebrated across the world, did you ever wonder how much you actually know about Ireland’s national holiday? Check these out...

• Traditionally, every year, the Irish leader hands a crystal bowl of shamrocks over to the U. S. President. The shamrock grown in Kerry is immediately destroyed by the Secret Service after the exchange.
• St. Patrick was not Irish. He was from Wales.
• The humble shamrock was originally a teaching tool. St. Patrick is said to have used the 3-leaved plant to explain the Holy Trinity (Father, Son, and Holy Spirit) to the pagan Irish.
• For many years, blue was the color most often associated with St. Patrick. Green was considered unlucky. St. Patrick’s blue was considered symbolic of Ireland for many centuries and the Irish Presidential Standard is still blue.
Irish Spuds & Green Dip
2 pounds baking potatoes
2 tablespoons olive oil
1 teaspoon each chili powder and kosher salt
1 cup ranch dressing
1 soft avocado
1⁄4 teaspoon green food color
DIRECTIONS: Preheat oven to 450°F. Cut potatoes into 3x1/2-inch wedges. Place in large bowl. Add oil; toss to coat well.
Mix chili powder and salt. Sprinkle over potatoes; toss to coat evenly. Arrange potatoes in single layer on foil-lined 15x10x1-inch baking pan. Bake 30 minutes or until potatoes are tender and golden brown.
Smash avocado and add to ranch dressing that has been mixed with food coloring. Serve with potatoes for dipping.
1 package (2-layer size) yellow cake mix
2 teaspoons green food color
3⁄4 cup marshmallow creme
1 bag (14 oz.) white confectionary coating wafers
Lollipop sticks Green sprinkles
DIRECTIONS: Prepare cake mix as directed on package, adding food color. Bake as directed on package for 13x9-inch baking pan. Cool completely on wire rack.
Crumble cake into large bowl. Add marshmallow creme; mix until well blended. Shape into 1- inch balls. Refrigerate 2 hours.
Melt coating wafers as directed on package. For each Cake Pop, dip 1/2 inch of lollipop stick into melted coating. Insert dipped end of lollipop stick halfway into cake ball. Let stand until coating is set. Dip each cake pop into melted coating. Shake gently to remove excess coating. Sprinkle or roll cake pops in green sprinkles, if desired. Place cake pops in styrofoam blocks. Let
stand until coating is set.
Easy Green Velvet Cupcakes Recipe
1 package (2-layer size) German chocolate cake mix with pudding
1 cup sour cream
1⁄2 cup water
1⁄4 cup unsweetened
cocoa powder
1⁄4 cup vegetable oil
1 bottle green food color 3 eggs
2 teaspoons pure vanilla
extract
Vanilla Cream Cheese frosting (Tips) Green sprinkles
DIRECTIONS: Preheat oven to 350°F. Beat cake mix, sour cream, water, cocoa powder, oil, food color, eggs and vanilla in large bowl with electric mixer on low speed just until moistened, scraping sides of bowl frequently. Beat on medium speed 2 minutes.
Pour batter into 24 paper-lined muffin cups, filling each cup 2/3 full.
Bake 20 minutes or until toothpick inserted in center of cupcake comes out clean. Cool in pan 10 minutes. Remove from pans; cool completely on wire rack. Frost with cream cheese frosting. Decorate with sprinkles.
Frosting Tips
Vanilla Cream Cheese Frosting: Beat 1 package (8 oz.) cream cheese, softened, 1/4 cup (1/2 stick) butter, softened, 2 tablespoons sour cream and 2 teaspoons Pure Vanilla Extract in large bowl until light and fluffy. Gradually beat in 1 box (16 oz.) confectioners' sugar until smooth. Makes 2-1/2 cups.
Minty Green Cream Cheese Frosting: Stir 1/2 teaspoon Pure Peppermint Extract and 1/2 teaspoon Green Food Color into canned cream cheese frosting or Vanilla Cream Cheese Frost-
ing.
4 cups prepared lemonade
1⁄2 teaspoon raspberry extract
15 drops green
food color
Directions:
Mix all ingredi- ents in pitcher.
Serve over ice in beverage
glasses.
Leprechaun Lemonade (kids)
Green Beer (adults)
1 can
(12 oz.)
light colored beer
5to6 drops
green food color
Per Cup
Serving
Size Directions: Pour beer into beverage glass. Add food color.
Stir gently until evenly tinted.
