 A versatile crust suitable for sweet
 dessert pies or savory vegetable pies.
 ¼ cup coconut oil
 ¼ cup peanut butter
 2 tablespoons honey (optional)
 1¼ cups whole wheat pastry flour or
 whole spelt flour
 3 tablespoons cold water
 1. In a medium bowl, combine the
 oil, peanut butter, and honey un-
 til smooth.
 2. Add the flour and mix until the
 mixture resembles coarse meal.
 Add the water and knead until
 smooth.
 3. Press the dough evenly into two
 9-inch round pie pans. Prick the
 crust several times with a fork.
 4. Bake at 375˚ F for 12 minutes. Add
 the desired pie or quiche filling.
