LANGOUSTINES IN A LEMON,
SALT AND PEPPER CRUST
Toss langoustines in corn flour
INGREDIENTS
Mix together lemon zest, breadcrumbs,
cracked pepper, and salt
18 Langoustines, shelled and de-veined
50 g corn flour Roll langoustines in egg wash, then toss in
2 lemons, zest only, trimmed and cut crumb mix.

Fry in hot oil until golden brown. (180O C)
150 g panko breadcrumbs
1 tbsp cracked pepper Place on small sticks for serving as a canapé,
or on baby gem lettuce leaves, with a lemon
