Healthy recipe
Chili Con Carne
Serves 2
INGREDIENTS METHOD
1 brown onion, diced
1 clove of garlic, crushed
1 carrot, diced
200g lean beef mince
1 tin of crushed tomatoes
1 tablespoon taco seasoning
1 cup red kidney beans, drained
1 cup (cooked) Basmati rice (equivalent to 70g uncooked)
1 zucchini
10 green beans
2 tbsp Greek yoghurt
1 tbsp extra virgin olive oil
1. Heat a pan over medium heat. Cook onion and garlic in olive oil until fragrant.
2. Add mince and seasoning and cook until browned. Add tomatoes and kidney beans. Bring to the boil, then simmer for 20 minutes until mixture has thickened.
3. Meanwhile, cook rice according to packet directions. Steam the zucchini, carrot and beans in the microwave for 2 minutes, or until tender.
4. Serve rice and chili between 2 bowls. Top with yoghurt and vegetables.
