Option 1 Use quinces instead of apples! Or pears! Or even
mangoes! If your fruit is firm enough, it will probably work very well
in a tarte tatin.
Option 2 For individual tarte tatins, line a sheet pan with parchment
and arrange 6 individual flan rings on top. Caramelize the fruit as
instructed and divide the caramel syrup among the rings. Tightly
pack the fruit into each ring in an even layer and top it with a round
of puff pastry, tucking the edges in between the fruit and the ring
before baking. Bake for 20 minutes, just long enough for the pastry
to brown and puff.
