                name  of  both  the  cookies  and  of  the  molds  from  which  they  are
                made.  Springerle  were  a  staple  in  my  childhood  home  during  the
                Christmas  season,  and  for  years  I  wondered  why  this  beautiful

                technique was relegated to the holidays. Then it occurred to me that
                I am a pastry chef. I can play with my springerle molds and anise
                extract  whenever  and  however  I  want!  So  I  present  to  you  the
                springerle pear tart. It’s got all the flavor and a big dose of beauty,
                and it’s available to you any time of the year.
