Oatmeal Date Turnovers

                        -            . It’s sweet yet deliciously wholesome. It’s
                also hearty enough to tide you over until supper. Just don’t ruin your
                dinner; it’s easy to eat one too many of these little gems.


                 FOR THE FILLING
                 pitted dates, chopped         ½ pound                              225 g

                 brewed coffee                 1 cup                                240 ml
                 lemon zest                    1 teaspoon                           2 g

                 cinnamon                      1 teaspoon                           3 g

                 salt                          pinch
                 FOR THE CRUSTS
                 unsalted butter               ½ cup                                115 g

                 vegetable shortening          ¼ cup                                50 g

                 brown sugar, firmly packed    1 cup                                220 g
                 egg                           1

                 salt                          pinch
                 whole milk                    ¼ cup                                60 ml

                 vanilla bean paste            1 teaspoon                           5 ml
                 all-purpose flour             2 cups                               250 g

                 baking soda                   1 teaspoon                           5 g
                 salt                          1 teaspoon                           6 g

                 quick-cooking oats            2 cups                               160 g
                 FOR THE ASSEMBLY

                 egg wash (1 egg whisked with 2 tablespoons/30 ml water)



                Procedure for the filling
                  In a heavy-bottomed saucepan over medium heat, bring the dates,
