Earl Grey Truffle Tart

he received gifts from the world over, including a black tea blended
with the heady bergamot citrus. He continued to enjoy the brew,
allegedly having it custom blended to suit his very particular tastes.
The mousse that fills this tart is blended exactly to my specifications,
pleasing my very American palate while infusing my treat with a
global sophistication every girl enjoys flirting with, and it certainly
doesn’t hurt that there are Earl Grey–infused truffles on each slice.
FOR THE CRUST
Sweet Tart Dough (page 30) 1 batch
FOR THE FILLING
Earl Grey tea bags 2
unflavored gelatin 1 generous tablespoon generous 7 g
sugar 1 cup 200 g
egg whites 5
salt pinch
heavy cream 1½ cups 360 ml
mascarpone cheese ½ cup 115 g
vanilla bean paste 1 teaspoon 5 ml

heavy cream ¾ cup 177 ml
unsalted butter 2 tablespoons 28 g
bittersweet chocolate,
chopped 8 ounces 225 g
cocoa powder, for dusting
