Velvet Elvis Pie

. He had a silken, sultry voice. His limber dance
grooves single-handedly gave a generation of girls (and some boys)
the vapors. But while I admire Elvis for all these wonders, nothing
can compare to his introduction of bananas and peanut butter to the
American food pantheon. Elvis may have left the building, but his pie
lives on.
FOR THE CRUST
Quick Puff Pastry (page 22) ⅛ batch
FOR THE FILLING
sweetened condensed milk 1 (14-ounce) can 1 (396-g) can
unsalted butter ½ cup 115 g
dark brown sugar, firmly ½ cup 110 g
packed
creamy peanut butter ½ cup 120 ml
salt ½ teaspoon 3 g
vanilla bean paste 1 teaspoon 5 ml
ripe (but not overly ripe) 4
bananas
eggs 4
FOR THE ASSEMBLY
heavy cream 1 cup 240 ml
high-quality bittersweet or
semisweet chocolate, at 1 (7-ounce) bar 1 (200-gm) bar
room temperature, for
making chocolate curls
Procedure for the crust

. Preheat the oven to 350°F (175°C). Line a 9-inch (23-cm) pie plate
with the dough, dock it, and freeze for 20 minutes.
