This seems to be the way with pastry history: Someone too tired or
too lazy to read directions properly ends up inventing a treat that
surpasses the original. Usually it’s the French who end up with the
happy accidents, but this time the English get the honors with the
Bakewell Tart, wherein, at the White Horse Inn in Derbyshire,
England, the kitchen help were told to make a simple jam tart. They
were just supposed to stir a few ingredients together and pour them
into the tart shell. Instead, said help layered the ingredients in one by
one without stirring, creating layers of color, flavor, and texture. It
makes me wonder how many other things these culinary sloths
messed up that turned out horribly . . . because we never hear about
those.
