BIRDSEED, CRUSHES, AND


                          ROCKY ROAD GARNISHES




                Garnishes add texture and flavor to both savory and sweet slab pies.
                You’ll need about ½ cup to scatter over a pie or sprinkle in a 2-inch
                swath  around  the  edges,  and  about  1  cup  to  cover  a  pie  more

                thoroughly. See How to Toast Nuts, here, to toast the seeds.





                                                    BIRDSEED



                                        Makes a little more than ½ cup



                ¼ cup (35 g) toasted sesame seeds

                2 tablespoons toasted pepitas (pumpkin seeds)

                2 tablespoons toasted sunflower seeds

                1 tablespoon poppy seeds
                1 teaspoon flaky salt, such as Maldon or fleur de sel

                ½ teaspoon crushed red pepper

                1 teaspoon grated lemon zest


                In a small bowl, stir together the seeds, salt, pepper, and zest. Store
                in a tightly closed jar in the refrigerator for one month.
