                                                      WHY VODKA?


                   Vodka in the crust tightens the crumb, increases the flake, and,
                   when  paired  with  shortening,  is  the  best  guarantee  against  a
                   tough crust. If vodka isn’t in your house, skip it. There is no need

                   to increase the water if the vodka is omitted.
