I keep lemonade concentrate in the freezer for recipes such as this one and for
making lemonade quickly on sultry summer days. Describing this lemony recipe,
the key word is “light.” The cupcakes start with an angel food cake mix to which
you add the concentrate and water—that’s it. And the frosting, too, is flavored
with the lemonade.
