COTTON CANDY CUPCAKES

Believe it or not, I am a health-conscious parent who serves three vegetables
every night with dinner, keeps fresh fruit in the house, and buys low-fat milk for
my children. And may I add that my children do not eat sweets every day! But,
with that said, here are some fun, nutrition-free cupcakes your children will
adore come party time. Why? They’re blue and they contain cotton candy. Few
kids can resist cotton candy.
MAKES 22 TO 24 CUPCAKES (2½ INCHES EACH)
PREPARATION TIME: 20 MINUTES
BAKING TIME: 17 TO 20 MINUTES
ASSEMBLY TIME: 10 MINUTES
24 paper liners for cupcake pans (2½-inch size)
CUPCAKES:
1 package (18.25 ounces) plain white cake mix
1½ cups blueberry yogurt (2 cartons, 6 ounces each)
¼ cup water
¼ cup vegetable oil
3 large egg whites (see “the Cupcake Doctor says”)
5 to 6 drops blue food coloring (see “the Cupcake Doctor says”)
COTTON CANDY BUTTERCREAM:
3 ounces (½ bag; about 4 cups) blue cotton candy (see “the Cupcake Doctor
says”)
