LITTLE FUDGE BROWNIE BITES

               It’s ironic that these bite-size chewy chocolate cupcakes show up in the
               children’s chapter when they are a mainstay of our school’s parent meeting
               refreshment table. In fact, I think these tiny cupcakes alone are responsible for
               luring so many busy parents to meetings on weeknights. Yet kids love them, too.
               They’re the perfect size for lunchboxes and for nibbling at the playground. And
               this recipe is a snap to prepare for either grownups or children.















                     MAKES 24 MINIATURE CUPCAKES

                     PREPARATION TIME: 10 MINUTES
                     BAKING TIME: 12 TO 14 MINUTES




               Vegetable spray for misting the pans
               All-purpose flour for dusting the pans

               1 package (20 ounces) brownie mix (see “the Cupcake Doctor says”)
               ⅓ cup water

               5 tablespoons butter, melted
               1 large egg

               1 teaspoon pure vanilla extract
               ½ cup semisweet chocolate chips



               1. Place a rack in the center of the oven and preheat the oven to 350°F. Lightly
               mist mini cupcake (2-inch size) cups with vegetable oil spray. Dust with flour,
