ELECTION CUPCAKES

               The history of the sweet yeast cake known as Election Cake or Hartford Election
               Cake is fascinating. A rich cake seasoned with sherry and nutmeg and crammed
               with dried fruit and nuts, it was served at election feasts in the early years of this
               country. These fun cupcakes might be served in February for Presidents’ Day or
               in November as Election Day Cupcakes. Of course, they rely on a modern cake
               mix, but they contain the traditional nutmeg, sherry, and currants.




                     MAKES 22 TO 24 CUPCAKES (2½ INCHES EACH)

                     PREPARATION TIME: 15 MINUTES

                     BAKING TIME: 15 TO 18 MINUTES

                     ASSEMBLY TIME: 15 MINUTES





               CUPCAKES:

               1 cup dried currants (half of a 10-ounce box)
               ⅔ cup cream sherry

               24 paper liners for cupcake pans (2½-inch size)
               1 package (18.25 ounces) white cake mix with pudding

               ⅓ cup all-purpose flour
               1 cup sour cream

               ⅓ cup vegetable oil
               3 large eggs
               1 teaspoon pure vanilla extract

               ¾ teaspoon ground nutmeg
