CINCO DE MAYO CUPCAKES

The fifth of May, or Cinco de Mayo, is the day Mexicans commemorate their
victory over the French in 1862. It is not the official Mexican independence day,
but it is an important holiday and is celebrated with parades, food, and music in
Mexico and in areas of the United States where there are large populations of
people of Mexican heritage. The top of these colorful cinnamon and chocolate
cupcakes is frosted to resemble the Mexican flag with three vertical stripes—
green, white, and red. A chocolate round in the center of the white stripe on the
cupcake represents the seal on the Mexican flag.
MAKES 22 TO 24 CUPCAKES (2½ INCHES EACH)

BAKING TIME: 16 TO 20 MINUTES
ASSEMBLY TIME: 30 MINUTES
24 paper liners for cupcake pans (2½-inch size)
CUPCAKES:
1 package (18.25 ounces) plain German chocolate cake mix
1 cup buttermilk
½ cup vegetable oil
3 large eggs
1 teaspoon pure vanilla extract
1 teaspoon cinnamon
