DOUBLE LEMON POPPY SEED CHEESECAKE MUFFINS

Many of us have a weakness for cheesecake—I know I do. I adore the
creaminess and the way it mellows the sweetness of an accompanying dessert
sauce. In this recipe, the creamy cheesecake topping with lemon zest offers the
perfect foil to a sweet lemon-scented poppy seed muffin. If you enjoy the

1 package (8 ounces) cream cheese, at room temperature
1 large egg
¾ cup sugar
