LEMON BUTTER MUFFINS
WITH A LEMON GLAZE

On a spring weekend morning, what could be nicer than a pan of these lemony
muffins fresh from the oven? They’re delicious with a cup of hot tea. Children
love them, too, especially when glazed with milk rather than with lemon juice.
However, I prefer the pucker-up quality of a double the dose of lemon.
MAKES 12 MUFFINS (2½ INCHES EACH)
PREPARATION TIME: 20 MINUTES
BAKING TIME: 18 TO 20 MINUTES
Vegetable oil spray for misting the pan
