SWEET POTATO CASSEROLE MUFFINS

Why wait until Thanksgiving dinner to enjoy the flavors of sweet potato
casserole? In this muffin you’ll find sweet potatoes, cinnamon, nutmeg, and
pecans. If you like, you can top them with miniature marshmallows. These are
hearty muffins, perfect for packing and taking to the mountains or for serving at
a cold-weather brunch alongside eggs.

1 can (15 ounces) canned sweet potatoes or yams, drained and mashed
¾ cup milk 2 tablespoons butter, melted
