At our house, if you leave these muffins on the kitchen counter they will be gone
in minutes. Not only do we love carrot cake, but we also love cheesecake. And
those two flavors come together in this stupendous recipe. It is based on a
cinnamon swirl muffin mix to which you add shredded carrots and a touch of
maple flavoring. A dollop of the cream cheese topping is the nicest surprise,
reminiscent of cream cheese frosting.

MAKES 12 MUFFINS (2½ INCHES EACH)
PREPARATION TIME: 20 MINUTES

BAKING TIME: 18 TO 20 MINUTES
