4. Use the food-decorating pen to number the cupcakes 1 through 15, writing the
number in the center of each cupcake. Or, tint the remaining frosting with black
food coloring. Fit a piping bag with a thin decorating tip and carefully pipe the
ball numbers in the center of each cupcake.
5. Using a small spoon, decorate the cupcakes with the tinted coconut, leaving a
circle of white around each number. Traditionally, billiard balls are the following
colors—1: yellow; 2: blue; 3: red; 4: purple; 5: orange; 6: green; 7: brown; 8:
black; 9: yellow stripe down the center, white circle with the number in the
center of the stripe, and white on the edges; 10: blue stripe down the center,
white circle with the number in the center of the stripe, and white on the edges;
11: red stripe down the center, white circle with the number in the center of the
stripe, and white on the edges; 12: purple stripe down the center, white circle
with the number in the center of the stripe, and white on the edges; 13: orange
stripe down the center, white circle with the number in the center of the stripe,
and white on the edges; 14: green stripe down the center, white circle with the
number in the center of the stripe, and white on the edges; and 15: brown stripe
down the center, white circle with the number in the center of the stripe, and
white on the edges.

Because of the effort that goes into decorating these cupcakes, I start with
the simplest white cupcake, such as White on White Cupcakes (page 166).
Use food coloring paste, which comes in a wider variety of colors than
liquid food coloring, to dye the coconut. Or, use colored sprinkles instead of
dying coconut. Or, if you’re using the coconut, dye it with all the colors
except brown and use chocolate sprinkles for cupcakes number 7 and 15.
6. Arrange the billiard cupcakes in a triangle on a platter about 18 by 15 inches
—row 1: ball 1; row 2: balls 2 and 3; row 3: balls 4, 5, 6; row 4: balls 7, 8, 9, 10;
row 5: balls 11, 12, 13, 14, 15. Set the white cupcake (the cue ball), to the side.
The Billiard Ball Cupcakes are ready to serve.
