The pecans and coconut are better if lightly toasted in a 350°F oven for 6 to
7 minutes, but that is up to you. And the cooked frosting really needs to cool
down for 20 minutes before you will be able to spread it on the cupcakes. If
you need to speed the cooling process a little, place the pan of frosting in a
bowl of ice water, stir constantly, and the frosting will cool in 10 to 15
minutes. Or pour the frosting into a shallow pan and stir. The increased
surface area will speed cooling.
