cool creaminess of it. And, as a bonus, it’s a breeze to make.
MAKES 3 CUPS, ENOUGH TO FROST 24 CUPCAKES (2½-INCH
SIZE) GENEROUSLY
PREPARATION TIME: 10 MINUTES
6 ounces white chocolate, coarsely chopped
4 ounces (half an 8-ounce package) reduced-fat cream cheese, at room
temperature
4 tablespoons (½ stick) butter, at room temperature
1 teaspoon peppermint extract
2 to 2½ cups confectioners’ sugar, sifted
