BUTTERSCOTCH MAPLE FROSTING

This rich and luxurious cream cheese frosting, with maple and butterscotch
flavors, is a winning combination that you’ll want to try on Triple Butterscotch
Cupcakes (page 83) and Prune Spice Cupcakes (page 81), as well as any pound
cake–like cupcake.
MAKES 3 CUPS, ENOUGH TO FROST 24 CUPCAKES (2½-INCH
SIZE) GENEROUSLY
PREPARATION TIME: 5 TO 7 MINUTES
1 package (8 ounces) reduced-fat cream cheese, at room temperature
4 tablespoons (½ stick) butter, at room temperature
2 to 2½ cups confectioners’ sugar, sifted
½ teaspoon maple flavoring
½ cup melted butterscotch chips
½ cup toasted pecans, chopped, for garnish (optional)

Keep a little bottle of maple flavoring on your baking shelf and you’ll find it
particularly complements butterscotch and vanilla flavors. Add a drop or
two to plain frostings or a generous teaspoon to cake batters for a more
complex taste.
1. Place the cream cheese and butter in a large mixing bowl. Blend with an
electric mixer on low speed until combined, 30 seconds. Stop the machine. Add
2 cups of the confectioners’ sugar, a little at a time, blending with the mixer on
