CREAM CHEESE FROSTING

               This is a perennial favorite frosting for cupcakes, whether they are Red Velvet
               (page 36)—or any rich chocolate cupcakes—or Plum Good Cupcakes (page
               152). Because some people like to frost liberally, while others like just enough
               frosting, I have included two recipes with different yields. Enjoy every bite.





























                     MAKES 3 CUPS, ENOUGH TO FROST 24 CUPCAKES (2½-INCH
                      SIZE) GENEROUSLY

                     PREPARATION TIME: 5 MINUTES




               PLENTY OF FROSTING:
               1 package (8 ounces) reduced-fat cream cheese, at room temperature
               4 tablespoons (½ stick) butter, at room temperature

               3 cups confectioners’ sugar, sifted
               2 teaspoons pure vanilla extract
