On April 27, the cellar's interior was completed and Friis was able to inform the city council in writing that he intended to open a restaurant and cafe, named "Tunneln," in the cellar of property number II in block Svanen, located at 40 Adelgatan, using his right to serve spirits on the following May 2nd.
Therefore, the Tunneln cellar restaurant can count its existence from Wednesday, May 2, 1866. During the years 1866-1868, Friis appointed the customs inspector Bengt Jonsson, who was born on August 21, 1833 and died on May 11, 1882, as manager of the cellar operation, and he had two servers to assist him. The kitchen was overseen during these years by the housekeeper Christine Moller. However, as Friis found that the business was not financially advantageous for him, he decided to instead rent the space to a competent person for such an operation. The first tenant in this regard was the restaurateur Gustav Axel Ortenblad, who was born on January 15, 1843 and died in Halmstad on August 9, 1896, but only held the operation for the year 1869.
The rent for the space was 1,400 kronor from this year until the 1880s and the main condition of the lease was that all wine and spirits used in the cellar operation had to be purchased from Hans Friis' business. Or- tenblad, who had one server to assist him, was later the owner of Stadt Hamburg. His successor was the restaurateur Gustav Fredrik Vilhelm Sandell, who was born on December 7, 1836 and died on March 13,
