want to float. You can keep it under water by placing a plate or bowl on top of it in the pot or you can slip a stainless steel spoon or a butter knife (no sharp tips) into the bag to weigh it down. Don't use silver, steel, or aluminum because they can be corroded by the salt and acidity of the food. Here’s a bag of pre-seared beef double sealed and weighted with a spoon:
It is best to put one serving per bag because some foods can stick together if crowded into a bag, and remember never stack servings on top of each other in a bag. Doing so doubles the thickness and cooking time.
Are The Bags Safe?
People are justifiably concerned about ingesting chemicals from some plastics, especially Bisphenol-A (BPA), a compound common in many plastics believed to be a carcinogen or hormone- mimic.
