Most sous vide bags and zipper bags are made from polyethylene (PE) and polypropylene (PP). They do not contain BPA and they are FDA approved. Prof. Blonder says “A good quality food grade PE bag from a reputable supplier does not contain plasticizers. Some of the PE monomers might not be fully reacted, and could leach out, but very few will touch the food at the low temperatures sous vide is cooked at. There is a faint smell from a warm PE bag, so something is volatile, but we don't know if it is riskier than, say, smoke, and we don’t know if it sticks to the food, and if it does, how much. Nor do we know if it is harmful, and if it is, how much is harmful. Given what we know today about the composition of the bags and the low temps employed, along with FDA studies, there is probably no need for concern. Much less risky than riding in a car.”
