 Currant Bread
Ingredients:
1 lb flour
1⁄2 teaspoon breadsoda
1⁄2 teaspoon of salt
1⁄2 pint of sour milk or buttermilk 4 ounces sultanas
1 teaspoon sugar
Method:
1. Put bread soda into the palm of your hand and press out lumps with finger tips. Sieve the flour, soda and salt into a bowl.
2. Add the sultanas and the sugar.
3. Make a well in the centre and pour in nearly
all the milk. Mix to a dough, adding more milk
if necessary.
4. Turn onto a floured surface and knead until the dough on the board is smooth.
5. Turn the smooth side up and flatten out.
6. Cut a design into the top using a knife (usually a cross)
7. Place on a lightly floured tray and bake on 180* for about 3⁄4 of an hour.
