 Oat cakes
Ingredients:
4 ounces fine oatmeal Pinch of bread soda 1⁄2 ounce of butter Pinch of salt
1 1⁄2 tablespoons of boiling water
Method:
1. Mix oatmeal, salt and soda together in a bowl.
2. Melt the butter in the boiling water and then pour over the oatmeal, mixing quickly and
well.
3. Turn onto a board that has been lightly dusted with light oatmeal.
4. Roll out thinly
5. Cut into biscuits using a cutter or knife
6. Cook on a heated griddle gently - the surface should not become brown.
7. Place in a cool oven or in front of the fire until they crisp up and serve
