 Chicken and black pudding
Ingredients:
Black Pudding
Chicken escalope
Black/white pudding
4 chicken fillets, an egg, flour, breadcrumbs, mixed herbs ,salt, black pepper, cajun.
4 cloves of garlic, pasata, basil, oregano and a tin of tomatoes
Mushrooms,tomatoes and pasta.
A baguette and garlic butter.
Method:
1. Flatten chicken fillets with a rolling pin, coat in flour, egg, breadcrumbs(salt lots of black pepper and cajun)
2. Place on a baking tray, cook at 180 degrees for 25-30 minutes, turn once during cooking.
3. For the sauce, fry your garlic in a bit of butter, add tomatoes, pasata,salt and pepper, herbs and seasonings, and leave to simmer for 5-6mins.
4. Fry the pudding for 5-6 mins and the mushrooms in butter for 5-6 mins and then the tomatoes for 3-4 mins.
5. And boil the pasta for 10-12 mins.
6. Butter the cut baguette with garlic butter.
