 Celebration Cake
 RECIPE
Cake Ingredients
1 & 3/4 cups Plain Flour organic
1 cup Monkfruit Caster Sugar
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp rock Salt
1/3 cup Lime Juice & Zest
2/3 cup Coconut Milk
1/3 cup Coconut Oil
1 Tbspn Apple cider vinegar
1/2 cup Desiccated coconut
1 tblspn Vanilla extract
1 tsp natural Green Food Coloring
Method
Preheat oven 170°C. Add all ingredients in a bowl, mix well. Line round cake tins with baking paper & coconut oil. Pour batter between two tins, shake tins on bench to get air bubbles out, bake 40 mins. After 30 minutes, check if ready by inserting a knife in centre of cakes. If comes out clean, cake is ready. Transfer cakes from tins to a wire rack to cool before frosting. When cakes are cool frost.
Frosting Ingredients
3 & 3/4 cups Monkfruit Icing Sugar 1/2-1 cup Vegan Margarine
3 Tbsp Lime Juice
Green food colouring
Method
Put ingredients in a bowl & use electric mixer, on slow speed, gradually increase speed until frosting is smooth & creamy. If frosting is too thin, add more icing sugar, if too thick, add a little more lime juice &/or margarine. The consistency should be thick, but still spreadable. Serve with vegan coconut cream.
