Honeydew Granola
Refreshing and healthy breakfast.
RECIPE
Ingredients
. Honeydew Melon
. Green Apple
. Green Pear
. Kiwi
. Coconut Yoghurt - non-dairy
Granola:-
. Kale - 2 cups
. Sunflower seeds - 1/2 cup
. Chia - 1/4 cup
. Pepitas - 1/2 cup
. Coconut
. Pistachios - 1/2 cup
. Almonds - 1 cup
. Raw Buckwheat - 1/2 cup
. Super Greens Blend or Spirulina - tblspn . Vanilla Extract - tblspn
. Cinnamon - tblspn
. Coconut Oil - 1/4 cup
. Maple Syrup - 1/4 cup
. Rock Salt - tspn
Method
Mix all ingredients together in a bowl. Spread mix on a lined baking tray, bake in oven on 160oC for 30 mins (mix halfway). If too chunky put in a food processor.
Melon preparation:-
With a spoon cut out meat of half a melon. Slice apple, kiwi, pear, mix melon meat into yoghurt & spoon in with granola, top with sliced fruit. Serve. Granola is also a great healthy snack any time of day.
