 Zoodles with Sundried Tomato & Roasted Capsicum Sauce

RECIPE
Ingredients
. 1 cup Sundried Tomatoes . 4 Cocktail Tomatoes . 1 cup Roasted Capsicum . 3 Garlic cloves
. Red onion
. 1/4 cup Pine nuts . Fresh Basil
. Rock Salt . Black Pepper . Chilli
. Sweet Paprika . Italian dried herbs
. Tin Chickpeas
Zoodles :-
. 2 Sweet potato . 2 Carrots
Method
In a blender mix chickpeas, 1/2 Sundried, Capsicum, tomatoes, handful of basil. In a pot fry onion, chilli, garlic then add pine nuts, 1/2 Sundried then stir in sauce until cooked through, add more fresh basil at the end, paprika, salt & pepper. Microwave the zoodles for 3 minutes and serve with sauce. Optional top with crushed toasted pine nuts. Enjoy the nutritional benefits, your body will thank you!
