Golden Soup


                   USING LIQUIDISER                        Melt the butter.
                   OR COLANDER AND SIEVE                   Add the onion and cook for 2 or 3 minutes
                   ’The mingled flavours of carrots        over low heat.
                   and tomatoes’                           Add  the  carrots  and  tomatoes,  roughly  cut
                   1 oz butter                             into  pieces,  together  with  sugar  and
                   1 small onion, chopped                  seasonings.
                   6 oz carrots                            Stir all well together and add ½ pt water.
                   1 lb ripe tomatoes                      Pour  the  other  ¼  pt  water  in  the  liquidiser
                   1 tsp sugar                             and then add the contents of the saucepan.
                   1 tsp salt                              Place  lid  in  position  and  blend  for  30
                   pepper                                  seconds on maximum speed.
                   1 tsp celery salt                       Strain if desired. When using colander and
                   ¾ pt water                              sieve  pass  the  soup  through  the  course
                   chopped parsley                         screen.
                   Serves 4                                Pour  back  into  the  saucepan  to  reheat
                                                           before  serving  -  garnished  with  chopped
                                                           parsley.

















                                                Split Pea Soup


                   USING LIQUIDISER                        Place  split  peas  in  the  liquidiser  and  grind
                   ’There is no need to soak the split     on top speed for 1 minute.
                   peas’                                   Melt fat in saucepan and add chopped onion
                   4 oz split peas                         and bacon.
                   1 large onion                           Cook  till  onion  is  golden  brown,  then  add
                   1 medium sized carrot                   carrot  and  turnip  cut  into  smallish  pieces
                   1 small turnip                          and cook 2 minutes longer, stirring well.
                   1 rasher of bacon or a few              Add  the  ground  peas  with  the  stock  and
                       bacon rinds                         bring to the boil.
                   1 oz fat                                Cover the saucepan and leave to simmer 45
                   1 tsp sugar                             minutes.
                   1½ pts stock or water                   Warm  the  liquidiser  goblet  and  pour  the
                   ½ pt milk                               soup in, adding some of the milk to fill to the
                   salt, pepper                            2-pt level.
                   Serves 4-6                              Switch  to  maximum  speed  and  blend  for
                                                           one minute.
                                                           Pour  back  into  the  saucepan  with  any
                                                           remaining  milk  and  add  salt  and  pepper  to
                                                           taste.
                                                           Reheat before serving with fried croutons.
