For Koshari For the Crispy Onion Topping
1 ½ cup brown lentils, picked over 1 large onion, sliced into thin rings
and well-rinsed Salt
1 ½ cup medium-grain rice, rinsed, ⅓ cup all-purpose flour
soaked in water for 15 minutes, ½ cup cooking oil
drained
1 cup vermicelli For Tomato Sauce
½ tsp each salt and pepper Cooking oil
½ tsp coriander 1 small onion, grated
2 cups elbow pasta 4 garlic cloves, minced
Cooking oil 1 tsp ground coriander
Water ½ -1 tsp crushed red pepper flakes
1 15-oz can chickpeas, rinsed, (optional)
drained and warmed 1 can 28-oz tomato sauce
Salt and pepper
1-2 tbsp distilled white vinegar
Koshary, koshari or kushari is a traditional Egyptian food. ,
mixing chickpeas, pasta, fried onions, and zesty tomato
sauce, served on top a bed of rice and brown lentils! Flavor
packed and very healthy!
