Serves8.Here is her recipe forSpanakopita, a spinach and fetacheese pie:1% pound chopped spinach(fresh or frozen)M> pound feta cheesebroken coarsely by hand4 ounces margarine4 ounces olive oil1 medium onion dicedM: clove garlicSalt, pepper, cinnamon,nutmeg8 sheets filo (very thin,store-bought dough)V%u00ab pound cooked riceSaute onion and garlic in oil andmargarine till lightly browned,strain and save the margarine andoil only. Place drained spinach in apot with 3 tablespoons garlic oiland saute 3 minutes under highheat, stirring constantly. Drain offexcess fat and let cool.Blend feta cheese with spinach,seasoning with salt, pepper, nutmeg, cinnamon and add rice.Grease a roasting pan with garlicoil and line with 4 sheets of filodough, brushing each with garlicoil. Filo must come over top of panand slightly overhang.Fill pan with spinach mixtureand cover with overlapping filo.Cut additional filo to cover top.Bake in 350-degree oven about 35minutes. Cut into diamond shapedpieces and serve hot.
