ClintonTwo For The PotOne of NewestAdditions to SceneBY EILEEN P.LATZOne of the newest additions to Atlantic Avenue%u2019s growing family of shops and services is TWO FOR THE POT, a coffee and tea specialty store opened in December. The name is a play on that time honored practice of adding one measure of coffee %u2018for the pot%u2019 to the quantity being brewed. The two of TWO FOR THE POT are Bill Smith and John McGill, both natives of Los Angeles, who came to open their Cobble Hill shop by a rather circuitous route.Bill was a financial analyst who came East and settled in New York after college. When his firm relocated to Denver, Bill opted for a less conventional, but overwhelmingly appealing position with McNulty's, the venerable coffee and tea emporium that has been doing business in the Village since 1895. It was at McNulty%u2019s that Bill met John who was working there after completing three years with Vista in a tenant organizing program. The two men learned the coffee and teabusiness inside out - retail, wholesale and mail order - during their three years at McNulty%u2019s and, late in 1973, with the blessing of McNulty%u2019s owners Bill and Connie Towart, they opened TWO FOR THE POT.Natural wood shelves holding jars of teas and herbs line the bright, small shop that is as warm and inviting as the handmade tea cosys on sale there. Ceramic tea ware, gleaming coffee makers, jars of imptorted French preserves and the aroma of fresh brewed coffee suggest a general-store atmosphere where customers may pull up a stool and enjoy a cup of coffee while waiting for their blend to be measured out or ground.TWO FOR THE POT limits their basic assortment of coffee to eight types ranging from the light and smooth to the hearty and robust. An especially popular bean is Mexican Coatepec which is unusual with its nut-like flavor. From thisbasic repertoire of eight, an incredible variety of blends can be made by combining any two or more in varying proportions. %u201c The shop also offers an Austrian roast decaffeinated and a Swiss %u201c instant\Mocafino.To facilitate sampling and ordering, TWO FOR THE POT maintains an index card file for customers, recording blend recipes and customer's reactions. An especially well received combination is TWO FOR THE POT%u2019s house blend made up of equal parts of Guatemalan Antiqua, Brazil Santos Bourbon and French Roast. Indian Cherry, Columbian Medellia and Espresso are also on hand.By limiting the basic selection of coffee and specializing in custom blending, Bill and John insure the freshness of their coffee which is by nature quite perishable. Bill notes that roasted coffee has a life span of not more than 30 days. At room temperature, ground coffee remains optimum for about one week. In bean form, it keeps its flavor three to four weeks.
