An Arabian merchant, at the outset of a long day%u2019s journey, put some milk in a pouch made of sheep%u2019s stomach. The heat from the sun on his desert crossing as well as the rennet from the pouch lining caused the milk to separate into curd and whey. At the end of his journey the merchant discovered what had happened to the milk, but rather than discard it, he drank the whey and ate the curd. He found both to his liking and spread the word about these new foods.Whatever its origins, cheese consumption is currently growing steadily in the United States. This increased consumption isattributed to greater uniformity and quality in production although extensive travel by millions of Americans to countries where cheese is a staple is also cited to account for increased interest in and knowledge about cheeses.U ntil the 19th century, cheesemaking was a local farm industry with many housewives making cheese from surplus milk. In 1851, the first cheese farm was built in the U.S. by Jesse William in Oneida County, New York.
