They are polite to the tastes of their counterparts%u2019 bottles. There are no negative comments about the wine tasted, but there is controversy about the manner in which it is made. The merits of California versus New York grapes are discussed. Pressing grapes by hand, or by foot, or mechanically, is discussed. They want to know the virtues of time left in the cask. They want to know how to avoid mold, or a grassy taste in the final product. And the information traded verbally is as important as the telling sips of red and white wines. Learning from, other winemakers%u2019 success and failure is a valuable tool in this tradition where neighbors once traded techniques over the backyard fence.It is essentially the winemaker who makes the difference between a sweetly successful bottle of wine and the bitter sting of vinegar. Jonathan Levine, director of Les Amis Devin, a winetasting society, puts it best when he describes America%u2019s romance with the winemaker. %u201cIn Europe, it is the winery that gets the acclaim. Here in America it is the winemaker. If (a winemaker) moves from one winery to another or opens his own, the people will follow the winemaker.
