TRAINING AND COMPETENCY
It is important that appropriate training and supervision is provided for staff and visitors (such
as delivery or maintenance personnel), so that they understand what they must do while at
your place of business to keep food safe and suitable.
If they aren’t trained properly, food may be contaminated and customers made ill if people do
not understand and put in place practices that keep food safe. Some staff may need
supervision due to inexperience, ability or the size of the operation.
The day-to-day manager or a delegated trainer must make sure that all staff and visitors are
trained so they know how to meet the rules about:
• Cleaning hands,
• wearing clean clothing,
• reporting sickness,
• dealing with foods that could make people sick,
• cleaning and sanitising,
• keeping foods separate in the food preparation area (including, managing allergens,
keeping raw/uncooked food away from cooked food, and managing chemicals and
poisons),
• other procedures which are specific to your food business,
• what to do when something goes wrong.
When to train staff:
• Before they start working in your food business,
• when a procedure is introduced or changed.
