                                                                         Pumpkin Soup
                                                                         Ingredients:
          D3 4-H FCH Quiz Bowl
                                                                         30 ounce can Pumpkin Puree
          Registration: November 4-18, 2020 Register on 4-H Online
                                                                         1  pint Heavy Cream
          Location:
                                                                         1 quart Chick Stock
          Wilbarger County Auditorium, 2100 Yamparika St.
                                                                         1/2 Yellow Onion diced
          Vernon, Texas 76384
                                                                         1 Clove Garlic minced
                                                                         3 stalks Celery diced

                                                                         3 Tablespoons Olive Oil

                                                                         Salt and Pepper to taste

                                                                         Instructions: Heat 3 tablespoons olive oil in large
                                                                         soup pot over medium heat.  Add your onion, celery
                                                                         and garlic.  Stir to combine.  Cook, stirring
                                                                         occasionally until onion and celery are translucent.
                                                                          Add pumpkin and stir.  Slowly add chicken stock
                                                                         while continuing to stir.  Add 1 pint heavy cream (you
                                                                         do not have to add all the cream if you are
                                                                         watching calorie/fat intake).  Salt and pepper to
                                                                         taste.  Bring to a slow simmer and cook for 15
                                                                         minutes.


                                                                         If you have sour cream in your refrigerator add a
                                                                         dollop of sour cream once your serve.  Pumpkins
                                                                         seeds also add a nice crunch.
