New Year's Food Traditions
Black eyed peas, cabbage, greens, cornbread and ham are known in
the Southern US as lucky foods to eat for New Year's. Corned beef
and cabbage along with potatoes, carrots and onions are eaten in
Ireland for a New Year filled with luck and abundance. Australians
celebrate the New Year with a barbecue and if you're in Scotland,
well, you better have your shortbread in tow if you're going over to a
friends house because it is expected. I asked for my Facebook friends
to let me know what they're eating New Year's Day and got some
interesting ideas!
THE PIZZA PLACE - BLACK EYED PEA PIZZA
Michelle Wisdom shared that their family's New Year's Day tradition
is The Pizza Place Black Eyed Pea Pizza. It's served just once a year
on January 1st and comes with onion, black eyed peas, bacon and
jalapenos on request. If you know me, you know my adventurous
palate and I can assure you, my family will be trying this interesting
pizza New Year's Day!!
HAM, BLACK EYED PEAS AND CABBAGE
Former Parker Co. 4-H Programming Assistant, Kimberly McClintock
keeps with the traditional southern classics of ham, black eyed peas
and cabbage. Kimberly shakes it up just a bit by broiling the
cabbage instead of boiling. "I cut it up, put it on a cookie sheet with
olive oil or avocado oil, salt, pepper and whatever seasoning I'm
feeling and broil it until the ends are a little crispy. Sometime you
may have to add oil and toss it around during the cooking process."
BLACK EYED PEA SALAD AND PIONEER WOMAN'S SKILLET
CORNBREAD
Martha Kingston shared her Black Eyed Pea Salad...
2 cans black eyed peas, drained and rinsed
1 large tomato, diced
1/2 large red onion diced
1 red, yellow or orange bell pepper, diced
1 jalapeno, diced
4 green onions, sliced
1/3 cup cilantro, chopped
1/4 cup rice wine vinegar
2 Tbsp. Olive Oil
Sea salt and freshly ground pepper to taste
1. Toss the veggies together in a large bowl
2. In a small bowl whisk together vinegar, oil, salt and pepper.
3. Pour dressing over the bean mixture, stir in cilantro, check
seasoning and refrigerate until ready to serve. The longer it
sits the better the flavor.
