                      Method
 Make white sauce as per sub recipe.
 Take the sauce off the heat and stir in half the cheese, stir until smooth.
 Place the fish in large gastronorms and pour over the cheese sauce.
 Sprinkle over the remaining cheese.
 Bake in the oven for 15 - 20 minutes Gas 4/180°C.
 Remove from the oven and serve.
