                         Method
 Melt the margarine in a pan and fry the onions for 5 minutes, add the garlic and fry for a further 30 seconds.
 Add the mushrooms and fry for a further 4-5 minutes.
 Cook the pasta in boiling salted water for 10-12 minutes, drain and return to the saucepan.
 Mix the beaten eggs into the hot saucepan with the pasta, stirring vigorously to coat the pasta, then add the mushroom onion mix and grated cheese, place into a serving dish.
 Garnish with chopped parsley.
