Method
Finely dice the onions and cook for 10 minutes in a suitable pan.
When the onions are lightly coloured add the garlic puree and cook for a further 3 minutes.
Add all the dry spices and cook for 5 minutes before adding the chopped tomatoes and simmer for 40 minutes.
Cut all your vegetables into a 1⁄2 inch dice and wash well. Keep the sliced green beans to one side.
Add all the vegetables, apart from the green beans, to the sauce and simmer gently until the sweet potatoes are soft and tender.
Add the green beans just before serving so that the colour is kept.
TIP: any seasonal vegetable will work well in this recipe and the more in season the cheaper they will be! Try speaking to your vegetable supplier.
