Method
Slice the onion and fry, without colouring, for 5 minutes then add the garlic and cook for a further 2 minutes.
Add the celery, cumin and paprika and mix well with the onion and garlic.
Mix in the rice and add the vegetable stock.
When the rice has absorbed all the liquid add the kidney beans, spinach, peas and sweetcorn.
TIP: Great on its own in a tub or use as a side dish.
