Method
Prick potatoes with a fork before cooking and, depending on your oven, bake the potatoes for 11⁄2 - 2 hours. Gas 4/180°C.
Once cooked slice jackets in half lengthways and scoop out potato.
Put 1kg of cheese into a bowl and mix with the scooped out potato, adjust seasoning.
Put the potato mixture into the jacket skins and top with the remaining grated cheese.
Place into the oven for 20 minutes or until golden brown.
TIP: this is a great way to use up left over jackets from the day before.
